Traditional Flan de Leche
1 cup sugar
1 cup water
12 egg yolks
1 (8 oz) can condensed milk
2 cups regular milk
1 tablespoon vanilla extract (lemon essence or peppermint can be substituted)
1. For the Caramel, combine sugar and water in small saucepan over low heat, stirring constantly until sugar dissolves, and mixture just begins to simmer and turns into a clear liquid. Once sugar dissolves and syrup is simmering, let cook for approximately 8-10 minutes, without stirring. Hold sides of pan and gently tilt pan off heat to distribute color evenly as sugar caramelizes.
2. When sugar turns to light golden brown color, immediately remove from heat and pour into an 8″ x 8″ x 2″ loaf pan, coating bottom of pan evenly (tilt pan so that caramel coats the bottom). Set aside and let cool.
3.Preheat oven to 375 degrees. For Custard, blend all ingredients in a blender. Pour mixture into the caramel-coated loaf pan, and tightly cover with aluminum foil to keep from drying. Place tin in a larger baking pan half-filled with water, and bake for about 1 hour or until custard is firm. Enjoy.
