Pretty. Delicious.No piece of produce is quite as festive as the deep crimson cranberry. With the holiday entertaining season and this beautiful, bold berry in mind, we’re sharing three recipes to recreate in your kitchen this year.

The versatile ingredient steals the show in an indulgent appetizer, refreshing frozen cocktail and delectable chocolate bark. These selections are designed to share, but we won’t tell anyone if you save them for yourself.

Sparkling Cranberry Brie Bites

Ingredients
2 cups fresh cranberries
1 cup good-quality maple syrup
1 cup granulated sugar
16 crackers
8 ounces Brie cheese
Cranberry chutney or cranberry relish, as needed
Fresh mint, to garnish

Directions
1. For the sugared cranberries, begin by rinsing the berries and placing them in a medium bowl.
2. Heat the maple syrup in a small saucepan just until warm, not too hot. Pour the warm syrup over the cranberries. (Note: If the syrup is too hot, the berries might pop.). Let the cranberries cool, then cover, and let them soak in the refrigerator overnight.
3. Drain cranberries in a colander. Place sugar in a large bowl or baking dish. Add cranberries in 2 batches and roll around until lightly coated in sugar. Place on a baking sheet until dry, about 1 hour.
4. To assemble, begin by placing a slice of Brie on each cracker, then a light layer of cranberry chutney, and then 4 – 5 sugared cranberries. Garnish with fresh mint.

Makes about 16 appetizers

Cranberry Slushes

Ingredients
2 cups whiskey (optional)
6 cups cranberry juice
4 1/2 cups pomegranate juice
2 cups orange juice
Juice of 2 limes
1 cup sugar
Water
1 cup fresh cranberries, diced
Mint leaves, to garnish

Directions
1. Combine the whiskey, 3 cups cranberry juice, pomegranate juice, orange juice, lime juice, sugar and 1/2 cup water in a large, shallow freezer-safe container. Stir well.
2. Cover the container and freeze until the mixture is icy, stirring every 20 – 30 minutes, for 4 – 5 hours.
3. To serve, scrape the frozen mixture with a spoon and divide among glasses, filling them three-quarters of the way. Divide the remaining 3 cups cranberry juice among the glasses and top with the diced cranberries. Stir until slushy and garnish with mint.

Cranberry Pistachio Chocolate Bark

Ingredients
1 cup dark chocolate candy melts
1 cup white chocolate candy melts
½ cup pistachios, shelled
½ cup dried cranberries

Directions
1. Line a cookie sheet with wax paper. Set aside.
2. Place dark chocolate melts in a medium microwave-safe bowl. Microwave on medium power for 30 seconds. Stir mixture and continue to microwave for 30-second intervals until the chocolate is completely melted.
3. Reserve about 2 tablespoons, then pour the dark chocolate onto the prepared cookie sheet and spread over surface with a spatula. Place cookie sheet in the refrigerator to set.
4. Melt white chocolate using the same 30-second interval method. Once it’s completely melted, stir in the pistachios and cranberries.
5. Pour the white chocolate over the hardened dark chocolate on the cookie sheet. Dip a spatula into the reserved dark chocolate and drizzle over the top of the bark to decorate.
Return cookie sheet to the refrigerator until the bark has hardened.
6. Once completely cooled and hardened, remove from the fridge and break apart into pieces. Store in a sealed container in a cool dark place so it does not melt.

(Note: We recommend doubling or tripling this recipe to fill a larger cookie sheet. Plus, it’s so delicious; you’ll want to have plenty on hand.)
